We froze some hand-foraged AZ spruce tips from our annual camping trip in May, and then brewers Sam and Jason went on a trip of their own to harvest fresh spruce branches. We then incorporated these into the mash and did a Sahti method where the branches and needles served as a mash filter.

RURU’s recipe at it’s core is a classic bitter IPA, but dry hopped with our collective favorite NZ varieties. We were blown away by Billy Goat Hop Farm Chinook, using it heavy handed and often in the boil to hit a desired bitterness and bring out its pine/dank characteristics, followed by a little Waimea in the whirlpool to lead into its planned dry hop. The large majority of its dry hop being our crowned favorite Kohia Nelson supplemented with a little more Waimea. Bright lemon zest with underlying tropical fruit flavors, followed by a crisp bitterness throughout. A new go to for us in this warmer weather. 7.4%

For our 2023 version of our late winter/early spring Pale Ale we used Cascade and Columbus hops in the mash, whirlpool and dry hopped. Copper was used in the whirlpool and dry hopping. We used a 50% Cosmic Punch and 50% Chico blend from Omega yeast. We wanted to add some thionals, without over doing it. Grain bill was 2 row, dextrin, and crystal 60.

Lesser Known's first Double IPA was conjured with Burial Beer Co. Brewed entirely with Pilsner malt and a little bit of corn sugar. Featuring the most deliciously “choice” Citra, Strata, and Vista from Burial’s hop inventory, and a smattering of Cascade from Billy Goat Hop Farm. It was then open fermented with WLP001 and has been cold conditioning for 2 weeks on even more Citra, Strata and Vista.
